Flaked Barley consists of barley grains that have been cooked at high temperature, resulting in gelatinisation of the starchy endosperm. Addition of Flaked Barley will promote head retention and add body to the finished beer.
Flaked barley can, however cause haze problems in paler styles, where the percentage should not exceed 5%.
